Rocco Forte Hotels delivers a mosaic of culinary cultures

Rocco Forte Hotels’ highly acclaimed second landmark hotel in Rome, Hotel de la Ville, features a cornucopia of dining choices in magnificent settings, launches Mosaico, an eclectic feast of taste and colour reminiscent of the intricate cultural exchanges in Rome over the centuries by celebrity chef Fulvio Pierangelini.
With his outstanding culture and a sharing concept in mind, the renowned Maestro and Creative Director of Food at Rocco Forte Hotels, Fulvio Pierangelini, has created a varied menu, masterfully blending Italian classics with inspiration from the Middle East, Asia and the Southern Mediterranean. Guests are invited on a culinary journey starting from reinvented local dishes such as basil-infused gnocchi or Spaghettoni with oven-baked tomatoes and salted ricotta cheese, continuing with exotic Manakeesh from Lebanon accompanied by colourful hummus and tender lamb loin cooked in an original clay pot.
An array of starters and salads based on seasonal local ingredients are worked into a delicate beetroot salad with oesetra caviar in yoghurt dressing, or an oriental ratatouille, perfectly braised peppers or a simple plate of French beans in lemon sauce. Freshly baked focaccia and naans are served with burrata and Parma ham; slithers of raw tuna or ruffles of precious truffle grace exquisite Mortadella. Meat and fish mains surprise guests with aromatic herbs and sauces in dishes ranging from oven-baked langoustines or ginger glazed sole to tender beef accompanied by wild mushrooms and peaches. Desserts are designed to truly delight and range from chocolate pizza to gratinated raspberries and light zabaione.
Although creative and innovative, simplicity is at the core of Pierangelini’s work as he explains: “It is not what you cook but how the food is prepared, which is important. Mosaico’s menu may be unusual for a Roman restaurant but it will delight guests by simply presenting the best from the garden, the stone oven, the sea and the farm.”
Whether dining al fresco in the beautiful courtyard or in the vibrant dining room flanked by the stunning open kitchen, guests will be captured by the atmosphere. A remarkable red stand-alone oven acts as a symbol of Pierangelini’s flair whilst candlelit copper table tops reflect an elegant soft light, contrasting with the striking black and white cement floor creating what the Maestro describes as: “A delightful and unexpected restaurant scene.”
Designed by Tommaso Ziffer, in a vibrant reinterpretation of the European Grand Tour, the Hotel de la Ville is housed in an 18th-century palazzo located at the top of the Spanish Steps in the heart of Rome. The hotel also offers Da Sistina, an all-day bistro reminiscent of the Roman trattorias and the Cielo terrace bar for light meals and cocktails overlooking the entire city. The Julep Herbal and Vermouth bar serve inventive drinks based on the 13th-century spice route and complete the outstanding food and beverage offering of Hotel de la Ville, confirming Rocco Forte Hotels’ attention to awarding guests a valuable and unique experience.

Chef Pierangelini is world-renowned for his award-winning sea side restaurant Il Gambero Rosso in San Vincenzo (Livorno), his ebullient master classes and his edgy, intuitive and trend-setting recipes. Fulvio Pierangelini, is of Roman origin, but trained and practised in Tuscany.
